This Grilled Halloumi Salad is a delicious Mediterranean-inspired dish featuring warm, golden halloumi cheese served over a bed of mixed greens and veggies, all tossed in a tangy dressing.

  • 8 oz halloumi cheese (sliced into 1/2-inch slabs)
  • 1 tablespoon olive oil

  • 1 cup cherry tomatoes (halved)
  • 1/2 cucumber (sliced)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup fresh mint or basil (chopped)

  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup

Instructions
