Shrimp:
- 1 pound large shrimp, peeled and deveined, tails on if desired
Pesto:
- 1/2 cup basil pesto (homemade or store-bought)
Other:
- 2 tablespoons olive oil
- juice of 1/2 lemon
- salt and black pepper to taste
- lemon wedges and fresh basil for garnish
Instructions
- Marinate the Shrimp: In a large bowl, combine the shrimp, basil pesto, olive oil, lemon juice, salt, and black pepper. Toss until well coated. Refrigerate for at least 30 minutes.
- Preheat the Grill: Preheat grill over medium-high heat.
- Grill the Shrimp: Thread shrimp onto skewers. Grill for 2-3 minutes per side until pink and opaque with grill marks.
- Serve: Remove from grill, garnish with basil and lemon, and serve.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
