Ground Beef Filling:

  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) can red enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Enchiladas:

  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican cheese blend
  • Fresh cilantro, sour cream, and sliced green onions for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Cook the beef: In a skillet, cook beef and onion until browned. Add garlic, green chiles, cumin, chili powder, salt, and pepper. Stir in 1/3 cup of enchilada sauce.
  3. Fill tortillas: Spoon beef mixture into each tortilla, top with cheese, roll up, and place in the baking dish.
  4. Bake: Pour remaining enchilada sauce over tortillas, sprinkle with remaining cheese. Bake covered for 20 minutes, then uncovered for 10 minutes until golden.
  5. Serve: Let rest for 5 minutes, garnish with cilantro, sour cream, and green onions.
