Description

Ground Beef Filling:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (4-ounce) can diced green chiles (optional)

Enchilada Assembly:

  • 1 (10-ounce) can red enchilada sauce
  • 1 1/2 cups shredded cheddar cheese, divided
  • 8 small flour tortillas
  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the beef: In a skillet, cook ground beef and onion until browned. Add garlic, spices, and green chiles if using. Stir in 1/2 cup enchilada sauce and 1/2 cup cheese.
  3. Assemble: Spread enchilada sauce in baking dish. Fill tortillas with beef mixture, roll, and place in dish. Top with remaining sauce and cheese.
  4. Bake: Cover with foil and bake for 20 minutes. Uncover and bake for another 5–10 minutes until cheese is melted.
  5. Serve: Garnish with cilantro and serve hot.
