Ground Beef Filling:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (4-ounce) can diced green chiles (optional)
Enchilada Assembly:
- 1 (10-ounce) can red enchilada sauce
- 1 1/2 cups shredded cheddar cheese, divided
- 8 small flour tortillas
- Chopped fresh cilantro, for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook the beef: In a skillet, cook ground beef and onion until browned. Add garlic, spices, and green chiles if using. Stir in 1/2 cup enchilada sauce and 1/2 cup cheese.
- Assemble: Spread enchilada sauce in baking dish. Fill tortillas with beef mixture, roll, and place in dish. Top with remaining sauce and cheese.
- Bake: Cover with foil and bake for 20 minutes. Uncover and bake for another 5–10 minutes until cheese is melted.
- Serve: Garnish with cilantro and serve hot.
Notes
- You can use corn tortillas for a gluten-free option.
- Customize by adding black beans or corn to the filling.
- Serve with sour cream, guacamole, or rice on the side.
