  • 1 cup cherry tomatoes, halved

Dressing

  • Juice of 1 lime

Instructions

  1. Cook the Ground Beef: Heat olive oil in a skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until it is browned and cooked through, about 7 to 9 minutes. Season the beef with garlic powder, onion powder, smoked paprika, salt, and black pepper. Remove from heat and allow it to cool slightly.
  2. Prepare the Salad Base: In a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, shredded cheddar cheese, diced avocado, and corn kernels if using. Add chopped cilantro if desired for extra freshness.
  3. Assemble the Salad: Add the warm, cooked ground beef on top of the salad mixture. Drizzle the juice of one lime and your preferred ranch or other dressing over the salad. Toss gently to combine all ingredients or serve layered according to preference.
