Ingredients

Scale

Ground Beef Stew:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)

Vegetables:

  • 3 medium carrots (sliced)
  • 3 medium potatoes (peeled and diced)
  • 2 stalks celery (sliced)

Sauce and Seasonings:

  • 1 can (14.5 ounces) diced tomatoes (with juice)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Heat Olive Oil: In a large pot, heat olive oil over medium heat.
  2. Brown Beef: Add ground beef, cook until browned, breaking it apart. Drain excess fat if needed.
  3. Sauté Aromatics: Add onion and garlic, sauté until softened.
  4. Add Vegetables: Stir in carrots, potatoes, and celery, cook for 5 minutes.
  5. Combine Ingredients: Add tomatoes, beef broth, tomato paste, Worcestershire sauce, herbs, salt, and pepper. Bring to a boil, then simmer.
  6. Thicken (Optional): Whisk flour with water, stir into the pot. Simmer for additional 10 minutes.
  7. Finish and Serve: Remove bay leaf, garnish with parsley before serving.

Notes

  • For added flavor, try sweet potatoes or peas and corn in the last 10 minutes.
  • Stew tastes better the next day as flavors deepen.
