Cake:

  • 1 cup Guinness stout
  • 1 cup unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 3/4 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Frosting:

  • 8 oz cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Melt Guinness and butter: In a saucepan, combine Guinness and butter over medium heat until butter is melted. Whisk in cocoa powder until smooth.
  3. Mix wet and dry ingredients: In a large bowl, whisk sugar, sour cream, eggs, and vanilla. Stir in the Guinness mixture. Sift in flour, baking soda, and salt, fold gently until just combined.
  4. Bake: Pour batter into pan, bake for 45–50 minutes until a toothpick comes out clean. Cool in pan.
  5. Make frosting: Beat cream cheese and sugar until smooth. Whip cream and vanilla until soft peaks form, fold into cream cheese. Spread over cake.
