Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground nutmeg to evenly combine the dry components.
  2. Combine wet ingredients: In a separate bowl, beat the two large eggs, then stir in the evaporated milk and vanilla extract thoroughly.
  3. Form batter: Pour the wet ingredients into the dry ingredients and mix until a thick, sticky batter forms, making sure no lumps remain.
  4. Heat oil: Warm vegetable oil in a deep pot or skillet over medium heat until it reaches 350°F (175°C), ensuring the oil is hot enough for frying.
  5. Fry beignets: Using two spoons, carefully drop spoonfuls of the batter into the hot oil without overcrowding. Fry each batch for 2–3 minutes per side until the beignets turn golden brown and puff up.
