For the maple frosting:

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1/3 cup pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  2. In a large bowl, cream the butter, oil, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each. Mix in vanilla and applesauce. Stir in grated carrots and apples. Gradually add the dry ingredients, mixing until just combined. Fold in nuts and raisins if using.
  3. Pour batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  4. For the frosting, beat the cream cheese and butter together until smooth. Add maple syrup and vanilla, then gradually beat in powdered sugar until desired consistency is reached. Spread evenly over cooled cake.
