Pasta Salad:

  • 12 ounces rotini or bowtie pasta
  • 1 medium sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1 cup baby spinach
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • Salt and freshly ground black pepper to taste

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C). Toss the diced sweet potato with olive oil, salt, and pepper. Roast for 20-25 minutes.
  2. Cook the pasta: Cook the pasta until al dente. Rinse under cold water to cool.
  3. Prepare the dressing: Whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, garlic powder, salt, and pepper.
  4. Combine ingredients: Mix pasta, roasted sweet potato, spinach, cranberries, pecans, feta, and red onion. Pour dressing, toss gently.
  5. Season and serve: Adjust seasoning with salt and pepper. Serve chilled or at room temperature.
