Ingredients

Scale

Cake Ingredients

  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 (20-ounce) can crushed pineapple (with juice)
  • 1 cup finely chopped walnuts
  • 3/4 cup flaked coconut
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Whipped Cream Cheese Frosting Ingredients

  • 1 (8-ounce) package cream cheese, softened
  • 1 cup white sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round pan or a 9×13-inch rectangular pan to prepare for baking the cake.
  2. Prepare the Batter: In a large bowl, whisk together the dry ingredients which include white sugar, brown sugar, baking soda, flour, cinnamon, nutmeg, and salt. In a separate bowl, mix the eggs, vanilla extract, and crushed pineapple (with juice). Gradually combine the wet ingredients with the dry mixture until evenly blended. Fold in the chopped walnuts and flaked coconut carefully for even distribution.
  3. Bake the Cake: Pour the prepared batter into the greased pan and place in the oven. Bake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Once done, remove from oven and allow the cake to cool completely on a wire rack.
  4. Prepare the Frosting: In a small bowl, whip the heavy cream until stiff peaks form, ensuring it is light and fluffy. In a large bowl, beat the softened cream cheese together with sugar, salt, and vanilla extract until the mixture is smooth and creamy. Gently fold the whipped cream into the cream cheese mixture to create a light, airy frosting.
  5. Assemble the Cake: After the cake has completely cooled, spread the whipped cream cheese frosting evenly over the top. Optionally, garnish with toasted coconut, additional chopped walnuts, or pineapple slices to enhance the appearance and flavor before serving.

Notes

  • Ensure the cake is completely cooled before frosting to prevent the cream cheese frosting from melting.
  • Toasting the coconut before adding it to the cake or as garnish can bring out a deeper flavor.
  • For a nut-free version, omit walnuts or substitute with sunflower seeds.
  • This cake can be stored refrigerated, covered, for up to 3 days to maintain freshness.
