For the soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon ground turmeric
- 1/2 teaspoon dried thyme
- 6 cups chicken broth
- 1 cup long-grain white rice
- 2 cups cooked shredded chicken
- juice of 1 lemon
- 2 tablespoons chopped fresh parsley
- salt and black pepper to taste
Instructions
- Heat olive oil: In a large pot over medium heat, add olive oil.
- Sauté vegetables: Add onion, carrots, and celery, sauté for 5–6 minutes until softened.
- Add seasonings: Stir in garlic, turmeric, and thyme, cook for another minute.
- Add broth and rice: Pour in chicken broth, bring to a boil, add rice, simmer for 15–18 minutes.
- Stir in chicken: Add shredded chicken, simmer for 2–3 minutes.
- Finish soup: Remove from heat, stir in lemon juice and parsley, season with salt and pepper, serve warm.
Notes
- For added depth, use bone broth instead of regular chicken broth.
- You can also stir in a handful of spinach or kale at the end for extra nutrients.
