For the soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon dried thyme
  • 6 cups chicken broth
  • 1 cup long-grain white rice
  • 2 cups cooked shredded chicken
  • juice of 1 lemon
  • 2 tablespoons chopped fresh parsley
  • salt and black pepper to taste

Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil.
  2. Sauté vegetables: Add onion, carrots, and celery, sauté for 5–6 minutes until softened.
  3. Add seasonings: Stir in garlic, turmeric, and thyme, cook for another minute.
  4. Add broth and rice: Pour in chicken broth, bring to a boil, add rice, simmer for 15–18 minutes.
  5. Stir in chicken: Add shredded chicken, simmer for 2–3 minutes.
  6. Finish soup: Remove from heat, stir in lemon juice and parsley, season with salt and pepper, serve warm.

Notes

  • For added depth, use bone broth instead of regular chicken broth.
  • You can also stir in a handful of spinach or kale at the end for extra nutrients.
