Chicken and Rice Soup:

  • 1 teaspoon grated fresh ginger
  • 8 cups low-sodium chicken broth

Instructions

  1. Heat olive oil: In a large pot over medium heat, heat olive oil. Add diced onion and cook for 3-4 minutes until softened.
  2. Add vegetables: Stir in garlic, carrots, celery, and ginger; cook for another 3-4 minutes.
  3. Add broth and chicken: Pour in chicken broth and bring to a boil. Add chicken, rice, thyme, turmeric, salt, and pepper. Reduce heat, cover, and simmer for 20-25 minutes.
  4. Shred chicken: Remove chicken, shred it, and return to the pot. Stir in parsley and lemon juice. Adjust seasoning if needed.
  5. Serve: Serve hot for a comforting meal.
