  • 1 pound salmon fillets, skin removed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Sauce and Seasonings:

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1 cup low-fat milk
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons water

Instructions

  3. Prepare Sauce: Sauté garlic, sun-dried tomatoes, and Italian seasoning. Add spinach, milk, broth, and cornstarch slurry. Simmer until thickened.
  4. Finish Dish: Stir in Parmesan, lemon juice, cooked pasta, and salmon. Toss gently to coat.
