For the Chicken:
- 4 boneless, skinless chicken breasts (about 1 ½ pounds), pounded to even thickness
- 1 cup whole wheat breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs
- Olive oil spray
For Assembly:
- 1 cup marinara sauce (low-sugar or homemade)
- 1 cup part-skim shredded mozzarella cheese
- 2 tablespoons chopped fresh basil or parsley (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
- Prepare the Coating: Whisk the eggs in a shallow bowl. In another shallow bowl, combine breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Coat the Chicken: Dip each chicken breast in the egg, then coat fully in the breadcrumb mixture. Place on the baking sheet and spray the tops with olive oil.
- Bake: Bake for 20–25 minutes until golden and cooked through. Spoon marinara sauce over each breast, top with mozzarella, and bake for 5–7 minutes until cheese is melted.
- Serve: Garnish with basil or parsley and serve hot.

- For added crispiness, broil the chicken for 1–2 minutes after adding cheese.
