For the Crust and Topping:

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup white whole wheat flour or all-purpose flour
  • 1/3 cup honey or maple syrup
  • 1/3 cup coconut oil or unsalted butter, melted
  • 1/4 cup light brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Berry Filling:

  • 1 1/2 cups mixed fresh or frozen berries (blueberries, raspberries, strawberries)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the Crust: Mix together oats, flour, honey, melted oil or butter, brown sugar, baking soda, salt, and vanilla. Set aside 3/4 cup for topping. Press the rest into the pan for the crust.
  3. Make the Berry Filling: Combine berries, cornstarch, lemon juice, and honey. Spread over the crust.
  4. Add the Streusel Topping: Sprinkle the reserved oat mixture over the berries.
  5. Bake: Bake for 25-30 minutes until golden brown.
  6. Cool and Serve: Let cool completely before slicing and serving.
