Ingredients

Scale

Dry Ingredients:

  • 1 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/3 cup coconut oil, melted and cooled
  • 1/3 cup pure maple syrup
  • 1 large egg
  • 2 teaspoons vanilla extract

Mix-ins:

  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking soda, and salt.
  3. Combine wet ingredients: In a separate bowl, whisk coconut oil, maple syrup, egg, and vanilla until smooth.
  4. Form dough: Combine wet and dry ingredients, mixing until a dough forms. Fold in chocolate chips and nuts if using.

Notes

  • For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water).
