Instructions
- Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking soda, and salt.
- Combine wet ingredients: In a separate bowl, whisk coconut oil, maple syrup, egg, and vanilla until smooth.
- Form dough: Combine wet and dry ingredients, mixing until a dough forms. Fold in chocolate chips and nuts if using.
- Bake: Scoop dough into tablespoon-sized balls and place 2 inches apart on the prepared baking sheet. Flatten slightly with your hand. Bake for 10–12 minutes or until edges are golden.
- Cool and enjoy: Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
