Main Meatloaf:

- 1 cup breadcrumbs (whole wheat preferred)

- 1 large egg
- 1/2 cup finely diced onion
- 2 cloves garlic, minced
- 1/2 cup grated carrot
- 1/4 cup chopped parsley
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Topping:
- 1/4 cup ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
- Prepare meatloaf mixture: In a large bowl, combine breadcrumbs and milk; let sit for 2–3 minutes to soften. Add ground chicken, egg, onion, garlic, carrot, parsley, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined—avoid overmixing for a tender loaf.
- Shape and top: Transfer mixture to the prepared pan and shape into a loaf. In a small bowl, whisk together ketchup, Dijon, and honey, then spread over the top.
- Bake: Bake for 45–50 minutes, or until internal temperature reaches 165°F (74°C). Let rest 5–10 minutes before slicing.
