Main Meatloaf:

  • 1 cup breadcrumbs (whole wheat preferred)
  • 1/2 cup milk
  • 1 large egg
  • 1/2 cup finely diced onion
  • 2 cloves garlic, minced
  • 1/2 cup grated carrot
  • 1/4 cup chopped parsley
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Topping:

  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. Prepare meatloaf mixture: In a large bowl, combine breadcrumbs and milk; let sit for 2–3 minutes to soften. Add ground chicken, egg, onion, garlic, carrot, parsley, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined—avoid overmixing for a tender loaf.
  3. Shape and top: Transfer mixture to the prepared pan and shape into a loaf. In a small bowl, whisk together ketchup, Dijon, and honey, then spread over the top.
  4. Bake: Bake for 45–50 minutes, or until internal temperature reaches 165°F (74°C). Let rest 5–10 minutes before slicing.
