  • 1 cup whole wheat flour

  • 1/4 teaspoon ground nutmeg

Wet Ingredients:

  • 2 large eggs
  • 1/3 cup coconut oil (melted)
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: Process oats into flour, then combine with whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: Whisk eggs, coconut oil, honey/maple syrup, applesauce, and vanilla.
  4. Blend Batter: Mix wet ingredients into dry, then fold in carrots, nuts, and raisins.
  5. Bake: Pour batter into pan and bake for 45-55 minutes. Cool before slicing.
