- 2 large eggs
- 1/3 cup coconut oil (melted)
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce

- 1 1/2 cups finely grated carrots
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins (optional)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- Mix Dry Ingredients: Process oats into flour, then combine with whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: Whisk eggs, coconut oil, honey/maple syrup, applesauce, and vanilla.
- Blend Batter: Mix wet ingredients into dry, then fold in carrots, nuts, and raisins.
- Bake: Pour batter into pan and bake for 45-55 minutes. Cool before slicing.
