Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare Dry Ingredients: In a medium bowl, whisk together oats, whole wheat flour, baking soda, cinnamon, and salt.
- Combine Wet Ingredients: In a large bowl, whisk melted coconut oil, honey or maple syrup, egg, and vanilla until smooth.
- Mix the Dough: Add dry ingredients to wet ingredients, stir until combined. Fold in raisins or chocolate chips and nuts.
- Bake: Scoop dough onto baking sheet, flatten slightly, bake for 8-10 minutes until golden.
- Cool and Enjoy: Let cookies cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
