- 1/3 cup honey or pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda

- Optional: 1/4 cup dark chocolate chips or chopped peanuts
Instructions
- Preheat the oven and prepare the baking sheet: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the wet ingredients: In a medium bowl, whisk together the peanut butter, honey or maple syrup, egg, and vanilla extract until smooth.
- Add dry ingredients: Stir in the baking soda and salt until fully combined.
- Add optional ingredients: If desired, fold in dark chocolate chips or chopped peanuts.
- Shape and bake: Scoop tablespoon-sized amounts of dough, roll into balls, and place on the prepared baking sheet. Press each ball with a fork to create a crisscross pattern. Bake for 8-10 minutes.
- Cool and enjoy: Allow the cookies to cool on the baking sheet before transferring to a wire rack to cool completely.
