Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet or wok. Cook chicken until browned and cooked through. Remove and set aside.
  2. Stir Fry Veggies: In the same skillet, stir-fry bell peppers, onion, garlic, and ginger until slightly softened.
  3. Add Pineapple: Add pineapple chunks and cook for another 2 minutes.
  4. Make the Sauce: Whisk together soy sauce, rice vinegar, honey, and sesame oil. Pour into skillet and return chicken.
  5. Thicken Sauce: If desired, add cornstarch slurry and cook until thickened.
