Scale

Dry Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil or melted coconut oil
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups chopped fresh rhubarb
  • 1/3 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, combine whole wheat flour, oats, baking soda, baking powder, cinnamon, and salt.
  3. Combine Wet Ingredients: In a separate bowl, mix honey/maple syrup, oil, eggs, applesauce, and vanilla.
