Instructions

  1. Prepare the Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, mix together the pumpkin purée, melted coconut oil, maple syrup, egg, and vanilla until smooth.
  2. In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Add the dry ingredients to the wet mixture and stir until just combined.
