  • 1 pound beef stew meat, cut into small cubes
  • Salt and black pepper to taste

Soup Base:

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 6 cups low-sodium beef broth
  • 2/3 cup pearl barley
  • 1 tablespoon Worcestershire sauce
  • 1 cup diced potatoes (optional)
  • 1 tablespoon chopped parsley for garnish

Instructions

  1. Prepare the Beef: Heat olive oil in a large pot, season beef with salt and pepper, and sear until browned. Remove and set aside.
  2. Sauté Vegetables: In the same pot, sauté onion, carrots, and celery until softened. Stir in garlic, tomato paste, thyme, and rosemary.
  3. Cook the Soup: Return beef to the pot with bay leaf, beef broth, Worcestershire sauce, barley, and potatoes. Simmer covered until beef and barley are tender.
  4. Finish and Serve: Remove bay leaf, adjust seasoning, and garnish with parsley before serving.
