Description

Hearty Lasagna Soup is a comforting and flavorful soup that combines all the delicious elements of classic lasagna in an easy-to-make one-pot meal. Ground beef, tomatoes, Italian seasoning, and broken lasagna noodles simmer together to create a rich broth, while creamy ricotta and melted mozzarella and Parmesan cheeses add the perfect cheesy finish. Perfect for a cozy family dinner in just 35 minutes.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 8 lasagna noodles, broken into pieces

Cheeses

  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Seasonings

  • Salt and pepper, to taste

Instructions

  1. Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook it, breaking apart with a spoon, until browned and fully cooked, about 6-8 minutes.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the browned beef. Sauté for about 3 minutes until the onions are softened and fragrant.
  3. Add Liquids and Seasoning: Stir in the crushed tomatoes, beef broth, and Italian seasoning. Bring the mixture to a simmer and let it cook for 10-15 minutes to develop flavors.
  4. Cook Noodles: Break the lasagna noodles into pieces and add them to the simmering soup. Continue to cook for 10-12 minutes until the noodles are tender and cooked through.
  5. Add Cheeses: Stir in the ricotta cheese, shredded mozzarella, and grated Parmesan until melted and well combined. Season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and serve hot. Optionally garnish with extra Parmesan cheese for added flavor.

Notes

  • You can substitute ground turkey or Italian sausage for the ground beef for a different flavor.
  • For a vegetarian version, replace beef broth with vegetable broth and omit ground meat, adding sautéed mushrooms instead.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated on the stovetop or microwave.
  • If the soup thickens too much upon standing, add a bit of water or broth when reheating to loosen it.
  • Feel free to add fresh basil or parsley as a garnish to brighten the flavor.
