For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium beef or chicken broth
  • 8 lasagna noodles, broken into pieces

For Garnish:

  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and diced onion and cook until the meat is browned and the onion is soft, about 6–8 minutes. Drain excess fat if needed.
  2. Add the garlic and cook for another minute until fragrant. Stir in the tomato paste, basil, oregano, salt, pepper, and red pepper flakes.
  3. Pour in the crushed tomatoes and broth. Bring to a boil, then reduce heat to a simmer. Stir in the broken lasagna noodles and cook uncovered for 10–12 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
  4. Once the noodles are cooked, remove the soup from heat. Stir in ricotta, mozzarella, and Parmesan until melted and creamy. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a lighter version, use ground turkey and part-skim cheeses.
  • Add spinach or zucchini for extra veggies.
