Additional Ingredients:
- 1 1/2 cups dried brown or green lentils, rinsed
- 1 can (14.5 ounces) diced tomatoes
- 6 cups vegetable broth
- 2 cups chopped kale or spinach
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste

Instructions
- Saute Vegetables: Heat olive oil in a large pot, sauté onion, carrots, and celery until softened.
