- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 1 carrot, peeled and finely grated
- 1 celery stalk, finely diced
Sauce Base:
- 2 tablespoons olive oil
- 1 can (28 ounces) crushed tomatoes
- 1 can (15 ounces) tomato sauce
- 2 tablespoons tomato paste
Seasonings:
- 1 teaspoon sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Garnish (optional):
- 1/4 cup chopped fresh parsley or basil
Instructions
- Heat the olive oil: In a large pot, heat the olive oil over medium heat.
- Cook the vegetables: Add the diced onion, carrot, and celery. Cook for 5-6 minutes until softened.
- Add seasonings: Stir in the minced garlic and cook for 30 seconds. Add crushed tomatoes, tomato sauce, and tomato paste.
- Simmer: Stir in sugar, oregano, basil, thyme, salt, pepper, and red pepper flakes. Simmer for 25-30 minutes until thickened.
- Adjust seasoning: Taste and adjust seasonings. Stir in fresh parsley or basil before serving if desired.
- Serve: Use over pasta, in lasagna, or as a dipping sauce.

- For a smoother texture, use an immersion blender before adding fresh herbs.
