Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage, breaking it apart as it cooks, and cook for 6–8 minutes until browned and fully cooked through. Transfer the cooked sausage to a plate and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until they are browned and tender. Then stir in the fresh spinach and sauté until wilted, about 1-2 minutes. Remove the skillet from heat.
  4. Mix Eggs: In a large bowl, whisk together the eggs, milk, salt, and black pepper until smooth and well combined.
  5. Combine Ingredients: Add the cooked sausage, sautéed vegetables, and shredded mozzarella cheese to the egg mixture. Stir thoroughly to combine all ingredients evenly.
  6. Pour and Smooth: Pour the combined mixture into the prepared baking dish, smoothing the top evenly with a spatula.
  7. Bake: Place the baking dish in the oven and bake for 30–35 minutes, or until the center is just set and the edges are golden brown.
  8. Cool and Serve: Remove the bake from the oven and let it cool for 5 minutes before slicing into portions and serving.
