Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it and lining with parchment paper if desired.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Mix wet ingredients: In a large bowl, cream the butter and sugar. Add eggs one at a time, then mix in sour cream and vanilla until smooth.
- Combine and bake: Stir in mashed bananas, then gradually fold in dry ingredients until just combined. Fold in nuts if using. Pour batter into the pan, smooth the top, and bake for 55-65 minutes until a toothpick comes out clean.
