Cookies:

Decoration:

  • 1/2 cup semisweet or milk chocolate chips (melted)
  • 1/4 cup finely chopped nuts (such as walnuts or hazelnuts)
  • Mini chocolate chips or black sesame seeds for eyes and nose

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the dough: In a large bowl, cream together the softened butter and powdered sugar. Mix in the egg and vanilla extract. Gradually add flour and salt, mixing until a soft dough forms.
  3. Shape the cookies: Scoop about a tablespoon of dough and shape into an oval with one end slightly pointed to resemble a hedgehog. Place on the prepared baking sheet and repeat with the remaining dough.
  4. Bake: Bake for 12–15 minutes or until the bottoms are lightly golden. Let cookies cool completely on a wire rack.
  5. Decorate: Dip the rounded back end of each cookie into the melted chocolate, then sprinkle or roll in chopped nuts. Place mini chocolate chips or black sesame seeds on the pointed end for eyes and a nose. Let the chocolate set before serving or storing.
