- 3 pounds Yukon Gold potatoes, peeled and cut into chunks
Buttermilk Mixture:
- 1 cup buttermilk
- 4 tablespoons unsalted butter
Herb Blend:
- 2 tablespoons chopped fresh chives
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh thyme
Seasonings:
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Cook Potatoes: Place potatoes in a large pot, cover with cold water, bring to a boil, then simmer until tender (about 15-20 minutes). Drain and return to pot.
- Mash Potatoes: Add butter, mash until smooth.
- Add Buttermilk: Gradually stir in buttermilk until desired consistency.
- Season: Mix in chives, parsley, thyme, salt, and pepper. Adjust seasoning to taste.
- Serve: Serve warm.
