Description

These High Protein Blueberry Bagels combine the tangy creaminess of Greek yogurt with the natural sweetness of fresh blueberries and the added boost of protein powder. Perfect for a nutritious breakfast or a satisfying snack, these homemade bagels are soft, flavorful, and packed with protein to keep you energized throughout the day.

Ingredients

Scale

Dry Ingredients

  • 1½ cups all-purpose flour (plus more for dusting)
  • 1 scoop unflavored or vanilla protein powder (about 25g)
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup plain Greek yogurt (high-protein, non-fat or full-fat)
  • 1 egg (beaten, for egg wash)
  • Optional: 1 teaspoon honey or sweetener of choice

Fruits

  • ½ cup fresh or frozen blueberries (lightly floured to prevent sinking)

Instructions

  1. Prepare the Oven and Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly dust the surface with flour to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, protein powder, baking powder, and salt until evenly combined.
  3. Add Yogurt and Form Dough: Add the Greek yogurt to the dry mixture and mix until a shaggy dough forms. The dough will be somewhat sticky but should come together well.
  4. Fold in Blueberries: Gently fold the lightly floured blueberries into the dough, distributing them evenly without crushing.
  5. Knead the Dough: Transfer the dough onto a floured surface and knead gently for 2 to 3 minutes until the dough is smooth and no longer sticky.
  6. Shape the Bagels: Divide the dough into 4 equal portions. Roll each piece into a log and shape into a ring, pinching the ends together to seal. Place the formed bagels on the prepared baking sheet.
  7. Apply Egg Wash: Brush the tops of each bagel with the beaten egg, which will give them a golden, shiny crust when baked.
  8. Bake: Bake the bagels in the preheated oven for 22 to 25 minutes, or until they are golden brown and cooked through.
  9. Cool and Serve: Remove the bagels from the oven and let them cool on a wire rack for 5 minutes before slicing and serving.

Notes

  • These bagels can be stored in the refrigerator for 3–4 days or frozen for longer-term storage.
  • For best texture and flavor, toast the bagels before eating.
  • Add 1 teaspoon honey or your choice of sweetener if you prefer a sweeter bagel.
