Ingredients
Scale
Dry Ingredients
- 1½ cups all-purpose flour (plus more for dusting)
- 1 scoop unflavored or vanilla protein powder (about 25g)
- 1 teaspoon baking powder
- ½ teaspoon salt
Wet Ingredients
- 1 cup plain Greek yogurt (high-protein, non-fat or full-fat)
- 1 egg (beaten, for egg wash)
- Optional: 1 teaspoon honey or sweetener of choice
Fruits
- ½ cup fresh or frozen blueberries (lightly floured to prevent sinking)
Instructions
- Prepare the Oven and Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly dust the surface with flour to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, protein powder, baking powder, and salt until evenly combined.
- Add Yogurt and Form Dough: Add the Greek yogurt to the dry mixture and mix until a shaggy dough forms. The dough will be somewhat sticky but should come together well.
- Fold in Blueberries: Gently fold the lightly floured blueberries into the dough, distributing them evenly without crushing.
- Knead the Dough: Transfer the dough onto a floured surface and knead gently for 2 to 3 minutes until the dough is smooth and no longer sticky.
- Shape the Bagels: Divide the dough into 4 equal portions. Roll each piece into a log and shape into a ring, pinching the ends together to seal. Place the formed bagels on the prepared baking sheet.
- Apply Egg Wash: Brush the tops of each bagel with the beaten egg, which will give them a golden, shiny crust when baked.
- Bake: Bake the bagels in the preheated oven for 22 to 25 minutes, or until they are golden brown and cooked through.
- Cool and Serve: Remove the bagels from the oven and let them cool on a wire rack for 5 minutes before slicing and serving.
Notes
- These bagels can be stored in the refrigerator for 3–4 days or frozen for longer-term storage.
- For best texture and flavor, toast the bagels before eating.
- Add 1 teaspoon honey or your choice of sweetener if you prefer a sweeter bagel.
