Description

Hillbilly Pie is a comforting and hearty casserole featuring layers of seasoned ground beef, sweet corn, diced tomatoes, and a creamy mushroom filling, all topped with a generous layer of cheddar cheese and creamy mashed potatoes. Baked to golden perfection, this dish is a delicious and satisfying meal that the whole family will love.

Ingredients

Scale

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Additional Layers:

  • 1 can (15 ounces) sweet corn, drained
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 can (10.5 ounces) cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 3 cups mashed potatoes (prepared fresh or instant)

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook Ground Beef: In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess grease and season with salt, pepper, and garlic powder.
  3. Combine Ingredients: Stir in corn, diced tomatoes, and cream of mushroom soup. Transfer mixture to the baking dish and top with 1 1/2 cups of cheddar cheese.
  4. Add Mashed Potatoes: Spread mashed potatoes over the cheese layer, then sprinkle remaining 1/2 cup of cheddar cheese on top.
  5. Bake: Bake for 25-30 minutes until golden and bubbly. Let rest before serving.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or cream of celery for variation.
  • For a spicier version, consider adding chopped green chilies or hot sauce to the ground beef mixture.
  • This dish is a great way to use up leftover mashed potatoes.
