Instructions
- Preheat and Prepare: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess grease and season with salt, pepper, and garlic powder.
- Combine Ingredients: Stir in corn, diced tomatoes, and cream of mushroom soup. Transfer mixture to the baking dish and top with 1 1/2 cups of cheddar cheese.
- Add Mashed Potatoes: Spread mashed potatoes over the cheese layer, then sprinkle remaining 1/2 cup of cheddar cheese on top.
