Description

Hobo Casserole is a comforting and hearty dish that combines layers of thinly sliced potatoes, seasoned ground beef, creamy mushroom sauce, and melted cheddar cheese. This easy-to-make casserole is a perfect family dinner option for any night of the week.

Ingredients

Scale

    Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil or butter for greasing
  • Other Ingredients:

  • 4 medium russet potatoes, thinly sliced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat and Prep: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish. Cook ground beef and onion until browned. Season with salt, pepper, and garlic powder.
  2. Layer Potatoes and Beef: Place half of the potatoes in the baking dish, top with half of the beef mixture, and repeat layers.
  3. Prepare Sauce: Whisk together cream of mushroom soup and milk. Pour over the casserole.
  4. Bake: Cover with foil and bake for 50–60 minutes. Remove foil, add cheese, and bake uncovered for 10–15 minutes more.
  5. Rest and Serve: Let it rest for 5–10 minutes before serving.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or cream of celery.
  • Enhance with green beans or corn between the layers for added vegetables.
