Ground Beef Mixture:
- 1 lb ground beef
- 1 small onion, diced
Potato Layer:
- 3 cups russet potatoes, thinly sliced
Sauce:
- 1 (10.5 oz) can cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped parsley for garnish (optional)
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook ground beef and onion: In a skillet over medium-high heat, cook the ground beef and diced onion until browned and fully cooked, about 6–8 minutes. Drain any excess fat.
- Prepare sauce: In a bowl, mix together cream of mushroom soup, sour cream, milk, garlic powder, salt, and pepper.
- Layer ingredients: Layer half of the sliced potatoes, followed by half of the ground beef mixture and a layer of the soup mixture. Repeat the layers once more.
- Bake: Cover tightly with foil and bake for 45–50 minutes or until the potatoes are fork-tender. Remove foil, sprinkle shredded cheese over the top, and bake uncovered for an additional 10–15 minutes, or until the cheese is melted and bubbly.
- Serve: Let rest for 5 minutes before serving. Garnish with parsley if desired.

- You can use frozen sliced potatoes to save time.
- Add green beans or corn between layers for extra vegetables.
- Swap the cream of mushroom for cream of chicken if preferred.
