Description

Hobo Casserole is a hearty and comforting dish that layers tender potatoes with savory ground beef, a creamy sauce, and melted cheddar cheese. This easy-to-make casserole is perfect for a cozy family dinner.

Ingredients

Scale

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, diced

Potato Layer:

  • 3 cups russet potatoes, thinly sliced

Sauce:

  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook ground beef and onion: In a skillet over medium-high heat, cook the ground beef and diced onion until browned and fully cooked, about 6–8 minutes. Drain any excess fat.
  3. Prepare sauce: In a bowl, mix together cream of mushroom soup, sour cream, milk, garlic powder, salt, and pepper.
  4. Layer ingredients: Layer half of the sliced potatoes, followed by half of the ground beef mixture and a layer of the soup mixture. Repeat the layers once more.
  5. Bake: Cover tightly with foil and bake for 45–50 minutes or until the potatoes are fork-tender. Remove foil, sprinkle shredded cheese over the top, and bake uncovered for an additional 10–15 minutes, or until the cheese is melted and bubbly.
  6. Serve: Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • You can use frozen sliced potatoes to save time.
  • Add green beans or corn between layers for extra vegetables.
  • Swap the cream of mushroom for cream of chicken if preferred.
