For the Salmon:

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/3 cup orange juice
  • 2 tbsp maple syrup or honey
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger

For the Cranberry-Pineapple Relish:

  • 1 cup fresh or frozen cranberries
  • 1/2 cup crushed pineapple (with juice)
  • 2 tbsp orange juice
  • 1 tbsp maple syrup or sugar
  • 1/4 tsp ground cinnamon
  • Pinch of salt
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F: Line a baking sheet with foil and lightly grease it. Place salmon fillets on the baking sheet, drizzle with olive oil, and season with salt and pepper.
  2. Prepare the Glaze: In a small bowl, whisk together orange juice, maple syrup, Dijon mustard, garlic powder, and ginger. Brush half the glaze over the salmon. Bake for 10–12 minutes, brushing with remaining glaze halfway through, until salmon is cooked through and flakes easily with a fork.
  3. Make the Relish: While the salmon bakes, combine cranberries, crushed pineapple with juice, orange juice, maple syrup, cinnamon, and a pinch of salt in a small saucepan. Bring to a simmer over medium heat. Cook for 8–10 minutes, stirring occasionally, until cranberries burst and the mixture thickens slightly. Let cool slightly before serving.
  4. Serve: Spoon cranberry-pineapple relish over glazed salmon and garnish with fresh parsley if desired.
