Vegetable Soup:

- 1 cup green beans, chopped
- 1 can (14.5 ounces) diced tomatoes
- 6 cups vegetable broth

- 1 cup alphabet pasta
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the olive oil: In a large pot over medium heat, heat the olive oil.
- Cook onion and garlic: Add the diced onion and cook until softened. Stir in minced garlic and cook for 30 seconds.
- Add vegetables: Add carrots, celery, zucchini, and green beans. Cook for 5 minutes.
- Combine with tomatoes and broth: Pour in diced tomatoes and vegetable broth. Stir in basil, thyme, salt, and pepper.
- Simmer: Bring to a boil, then simmer for 10 minutes.
- Add pasta: Stir in alphabet pasta and cook for 8-10 minutes.
