Vegetable Soup:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth

Other Ingredients:

  • 1 cup alphabet pasta
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the olive oil: In a large pot over medium heat, heat the olive oil.
  2. Cook onion and garlic: Add the diced onion and cook until softened. Stir in minced garlic and cook for 30 seconds.
  3. Add vegetables: Add carrots, celery, zucchini, and green beans. Cook for 5 minutes.
  4. Combine with tomatoes and broth: Pour in diced tomatoes and vegetable broth. Stir in basil, thyme, salt, and pepper.
  5. Simmer: Bring to a boil, then simmer for 10 minutes.
  6. Add pasta: Stir in alphabet pasta and cook for 8-10 minutes.
