  • 1 1/2 cups mixed fresh or frozen berries (such as blueberries, raspberries, strawberries, or blackberries)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Egg Wash:

  • 1 large egg
  • 1 tablespoon water

Toppings (optional):

  • Coarse sugar for sprinkling
  • Powdered sugar for dusting

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Berry Filling: In a medium bowl, mix the berries, sugar, cornstarch, lemon juice, and zest. Set aside.
  3. Roll Out Pastry: Roll the puff pastry into a 12×12-inch square on a floured surface. Cut into 4 squares.
  4. Fill & Fold: Spoon berry mixture onto each square, fold into triangles, and seal edges. Crimp with a fork.
  5. Egg Wash: Whisk egg and water, brush over turnovers, sprinkle with sugar if desired.
  6. Bake: Bake for 18-20 minutes until golden. Dust with powdered sugar before serving.
