Black Bean Patties:

  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1/2 green bell pepper, finely chopped
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (use gluten-free if needed)

For Cooking:

  • 2 tablespoons olive oil

To Serve:

  • burger buns and toppings of choice (lettuce, tomato, avocado, cheese, etc.)

Instructions

  1. Mash the Beans: Place the drained black beans in a large bowl and mash with a fork or potato masher until mostly smooth with some chunks remaining.
  2. Combine Ingredients: Add the chopped bell pepper, onion, and minced garlic. Stir to combine.
  3. Prepare the Mixture: In a small bowl, whisk the egg with chili powder, cumin, smoked paprika, salt, and black pepper. Pour the egg mixture into the bean mixture and add the breadcrumbs. Mix well until fully incorporated.
  4. Shape the Patties: Divide the mixture into 4 equal portions and shape into patties.
  5. Cook the Patties: Heat the olive oil in a large skillet over medium heat. Cook the patties for about 5-6 minutes on each side until crispy and heated through.
  6. Serve: Serve the black bean burgers on buns with your favorite toppings.

Notes

  • To make vegan, replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water).
