Main Dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons anchovy paste (optional but recommended)
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons water, to thin if needed

Instructions

  1. Mix Ingredients: In a medium bowl, whisk together mayonnaise, Parmesan cheese, Dijon mustard, lemon juice, Worcestershire sauce, anchovy paste, minced garlic, salt, and black pepper until smooth.
  2. Add Olive Oil: Slowly drizzle in the olive oil while whisking to emulsify the dressing.
  3. Adjust Consistency: Add a tablespoon or two of water if needed to reach your desired consistency.
  4. Taste and Refrigerate: Taste and adjust seasoning if needed. Transfer to a jar and refrigerate until ready to use.
