  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken (from rotisserie or poached)
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Sauté Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until softened.
  2. Cook Aromatics: Stir in minced garlic and cook until fragrant.
  3. Add Broth and Seasonings: Pour in chicken broth, add thyme, parsley, bay leaf, salt, and pepper. Bring to a boil, then simmer.
  4. Cook Noodles: Add egg noodles and simmer until tender.
  5. Finish Soup: Stir in shredded chicken, simmer until heated through. Adjust seasoning, remove bay leaf, and garnish with fresh parsley.
