Peach Chutney:
- 4 cups peeled and chopped ripe peaches (about 6 medium)
- 1 cup finely chopped onion
- 1/2 cup golden raisins
- 1/2 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 tablespoon grated fresh ginger
- 1 clove garlic, minced
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a medium saucepan over medium heat, combine the chopped peaches, onion, golden raisins, brown sugar, and apple cider vinegar.
- Stir in the grated ginger, minced garlic, cinnamon, cloves, salt, and red pepper flakes if using.
- Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 45 to 55 minutes, stirring occasionally, until thickened and jam-like in consistency.
- Remove from heat and let cool completely.
- Transfer to a jar or airtight container and refrigerate. Use within 2 weeks for best flavor.
