Other Ingredients:

  • 2 pounds boneless pork shoulder, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 cup fresh pineapple, diced
  • 12 small corn tortillas
  • 1/2 cup chopped white onion
  • 1/2 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Prepare the Marinade: Boil the dried chiles, then blend with garlic, pineapple juice, vinegar, achiote paste, and seasonings.
