- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cloves
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Other Ingredients:
- 2 pounds boneless pork shoulder, thinly sliced
- 2 tablespoons vegetable oil
- 1 cup fresh pineapple, diced
- 12 small corn tortillas
- 1/2 cup chopped white onion
- 1/2 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Prepare the Marinade: Boil the dried chiles, then blend with garlic, pineapple juice, vinegar, achiote paste, and seasonings.
- Marinate the Pork: Coat the sliced pork with the marinade and refrigerate for at least 4 hours.
- Grill the Pork: Cook the marinated pork slices until charred and cooked through.
