Chicken:
- 4 boneless skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
Gravy:
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 cup whole milk or heavy cream
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- chopped parsley for garnish
Instructions
- Heat the skillet: Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken: Season chicken with salt and pepper, then sear in the skillet until golden brown and cooked through. Set aside.
- Make the gravy: In the same skillet, melt butter, cook onion until soft, add garlic, then stir in flour to make a roux. Gradually whisk in chicken broth, milk/cream, thyme, salt, and pepper. Simmer until thickened.
- Combine chicken and gravy: Return chicken to the skillet, spoon gravy over, and simmer together.
- Serve: Garnish with parsley and serve hot.
