Chicken:

  • 4 boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)

Gravy:

  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup whole milk or heavy cream
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • chopped parsley for garnish

Instructions

  1. Heat the skillet: Heat olive oil in a large skillet over medium-high heat.
  2. Sear the chicken: Season chicken with salt and pepper, then sear in the skillet until golden brown and cooked through. Set aside.
  3. Make the gravy: In the same skillet, melt butter, cook onion until soft, add garlic, then stir in flour to make a roux. Gradually whisk in chicken broth, milk/cream, thyme, salt, and pepper. Simmer until thickened.
  4. Combine chicken and gravy: Return chicken to the skillet, spoon gravy over, and simmer together.
  5. Serve: Garnish with parsley and serve hot.
