- 2 carrots, peeled and sliced

- 8 cups low-sodium chicken broth
- 2 cups cooked shredded chicken (rotisserie works great)
- 2 teaspoons dried parsley
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 6 ounces egg noodles
- 1 tablespoon lemon juice (optional)
- Chopped fresh parsley for garnish (optional)

- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5-6 minutes until vegetables begin to soften.

- Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and stir in shredded chicken, parsley, thyme, salt, and pepper.
- Simmer for 10 minutes to let the flavors combine.
- Add the egg noodles and cook for 8-10 minutes until tender.
- Stir in lemon juice if using. Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh parsley if desired.
