  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 2 teaspoons dried parsley
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 6 ounces egg noodles
  • 1 tablespoon lemon juice (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5-6 minutes until vegetables begin to soften.
  2. Stir in the garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and stir in shredded chicken, parsley, thyme, salt, and pepper.
  4. Simmer for 10 minutes to let the flavors combine.
  5. Add the egg noodles and cook for 8-10 minutes until tender.
  6. Stir in lemon juice if using. Taste and adjust seasoning as needed.
  7. Serve hot, garnished with fresh parsley if desired.
