Ingredients

For the Honey BBQ Sauce:

1/2 cup BBQ sauce,
2 tablespoons honey,
2 cloves garlic, minced,

Salt and pepper to taste,

For the Chicken Rice:

1 1/2 pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces,
1 tablespoon olive oil,
3 cups cooked white or brown rice,
1 cup frozen corn, thawed,
1/2 cup diced red bell pepper,
2 green onions, sliced,
Fresh cilantro, chopped for garnish (optional)


Instructions
