For the Chicken Rice:
1 1/2 pounds boneless skinless chicken breasts or thighs, cut into bite-sized pieces,

1 cup frozen corn, thawed,
1/2 cup diced red bell pepper,
2 green onions, sliced,
Fresh cilantro, chopped for garnish (optional)
Instructions
- Make the Honey BBQ Sauce: In a small bowl, whisk together BBQ sauce, honey, minced garlic, smoked paprika, onion powder, salt, and pepper.
