Marinated Chicken:
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 chipotle peppers in adobo sauce, minced
- 2 tablespoons honey
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
Assembly:
- 2 cups cooked white or brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced fresh tomatoes
- 1 avocado, sliced
- ¼ cup chopped fresh cilantro
- lime wedges for serving
Instructions
- Marinate the Chicken: In a medium bowl, combine minced chipotle peppers, honey, lime juice, garlic, smoked paprika, cumin, and salt. Add chicken pieces and toss to coat. Cover and marinate for at least 30 minutes.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and slightly caramelized.
- Assemble the Bowls: Divide cooked rice into bowls and top with black beans, corn, diced tomatoes, cooked chicken, and avocado slices. Garnish with fresh cilantro and serve with lime wedges.
