Chicken Kabobs:
- 1 ½ pounds boneless, skinless chicken breasts or thighs (cut into 1.5-inch cubes)
- 1 red bell pepper (cut into chunks)
- 1 yellow bell pepper (cut into chunks)
- 1 red onion (cut into chunks)
- 1 zucchini (sliced thick)
- 2 tablespoons chopped green onions (for garnish)

Marinade:
- ⅓ cup soy sauce (low-sodium)
- ¼ cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 garlic cloves (minced)
- 1 tablespoon fresh ginger (grated)
- ½ teaspoon crushed red pepper flakes (optional)
- salt and pepper to taste
Instructions
- Prepare Marinade: Whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, red pepper flakes, salt, and pepper.
- Marinate Chicken: Coat chicken cubes with marinade in a bag or bowl. Refrigerate for at least 1 hour.
- Grill Kabobs: Thread chicken pieces onto skewers with veggies. Grill for 10–12 minutes until cooked through.
- Finish and Serve: Sprinkle with green onions and sesame seeds. Serve hot.
